1 cup (250 ml) apple, grated (3 small apples)
1 cup (250 ml) banana, mashed (3 – 4 bananas)
½ cup (125 ml) dates, finely chopped
2 free-range organic eggs
½ cup (125 ml) olive oil
1 tablespoon (15 ml) purified water
2 cups (500 ml) oat flour
1 teaspoon (5 ml) bicarbonate of soda
1 teaspoon (5 ml) cinnamon, ground
½ teaspoon (2 ml) sea or rock salt
½ cup (125 ml) sunflower seeds (optional)
1. Pre-heat the oven to 190c
2. Grease a bread tin.
3. Place the apple; banana; and dates in a bowl.
4. Add the eggs, olive oil and water to the fruit and date mixture.
5. Beat well using a wooden spoon.
6. Sift the dry ingredients and fold into the above mixture.
7. Add the sunflower seeds.
8. Bake the banana loaf at 190C for 1 hour and 10 minutes or until cooked through and golden.
Variation:This recipe can be used to make banana muffins. Bake the banana muffins in a muffin pan at 180C for 30 minutes or until cooked through and golden.
Tip:When making banana bread, butter the base and sides of a bread tin and line the base of the bread tin with greaseproof paper or sprinkle with oat flour.
Do not open the oven door while baking.
