Quantities made easy
- a 500 g bag of dried lentils is approximately 2½ cups (625 ml)
- 1½ cups cooked chickpeas or beans = 1 tin (400 g)
- the juice of ½ lemon is approximately 1 tablespoon (15 ml)
- 2 tablespoons (30 ml) chickpea or pea flour + 4 tablespoons (60 ml) purified water can substitute 1 egg; or
- 2 teaspoons (10 ml) guar gum + 4 tablespoons (60 ml) purified water can substitute 1 egg

Important note:
Oven thermostats vary, therefore your oven may be warmer or cooler than our test oven – if you find that the oven temperatures used on this website are too hot, we would recommend that you reduce the temperature of your thermofan oven by 20°C, and the imported thermofan ovens by 30°C. Thermofan ovens are equipped with a fan at the back of the oven, whereas conventional ovens do not have this facility.
Conventional oven temperatures remain the same as suggested in the recipes. We suggest you buy a good oven thermometer and check the temperature of your oven. If using a fan-forced or thermofan oven, your cooking time may be a little quicker, so start checking your food a little earlier.
