Apple crumble

serves 2

1 large or 2 small granny smith apples

a few drops of freshly-squeezed lemon juice

100 ml apple juice* or purified water

½ cup (125 ml) dried, sulphur-free figs, dates or raisins, chopped

¼ teaspoon (1 ml) sprinkling of ground cinnamon

50 ml organic or farm butter

½ cup (125 ml) oat flour

½ cup (125 ml) rolled oats

2 tablespoons (30 ml) honey

  1. Pre-heat the oven to 180°C.
  2. Core the apples and cut into small pieces, no need to peel.
  3. Sprinkle the apple with lemon juice to prevent browning.
  4. Place the apple in a 21 cm greased ovenproof dish.
  5. Pour the apple juice or water over the apples and then sprinkle the dried fruit and cinnamon over the apples.
  6. Rub the butter into the flour and oats with your fingertips until it resembles crumbs.
  7. Gently heat the honey in a saucepan, remove from the heat and lightly toss the crumble mixture into the honey.
  8. Gently spread over the apple mix.
  9. Bake for 30 minutes.

Note

*Make your own apple juice by liquidizing 1 apple with 100 ml water.

Variation

Use orange juice instead of apple juice and replace the dates or raisins with ¼ cup dried, chopped apricots and add some grated orange rind.
