Carob banana topping

serves 4

4 ripe bananas
½ cup (125 ml) carob powder, sifted
½ tsp (2 ml) pure vanilla extract
2 tbsp (30 ml) freshly-squeezed orange juice

1. Blend the ripe bananas in a food processor; add the sifted carob powder, vanilla extract and orange juice. Add more juice if you want a thinner consistency.
2. Serve with homemade ice-cream or fruit salad.

Variations
Add 1 tbsp desiccated coconut and blend well.
Replace the carob powder with raw cacao powder.
Use frozen bananas to make a delightful sorbet.
