Serves 2
1 sweet potato
12 large ripe strawberries
2 tablespoons (30 ml) heavy cream
1. Pre-heat the oven to 170°C.
2. Prick the sweet potato with a knife, place it on a baking tray and bake for 45 minutes to 1 hour or until soft when pricked with a knife.
3. Remove the pulp from the skin and mash with a fork.
4. Mash the strawberries and add to the sweet potato with the cream.
5. Pulse the mousse lightly with a hand blender or mash with a fork until the ingredients are smooth.
Variation:
Use 2 ripe peeled bananas instead of strawberries.
